This meal is so good on a cold winter night and would make a perfect meal for the Super Bowl. It’s super, super easy and was one of my mom’s go-to meals when she was rushed for time. She was a fantastic cook, though our menus were always simple and somewhat “plain” by today’s standards. Still, this dish evokes loving memories of childhood and cold, snowy nights when a hot, tasty meal was so appreciated.
I just call it “Chops” since that’s what my mom called it.
Here’s the whole complicated process 🙂
Just grab a package of pork chops, put in a baking dish, and pour one or two cans of Campbell’s Chicken Gumbo soup all over the top of the chops.
Bake at 350 for 45 minutes to an hour, or until the chops are fully cooked, and enjoy.
We like the taste so much that I will often open another can of Chicken Gumbo soup, add the drippings from the pan with as much fat skimmed off as possible, and add 1 tsp of cornstarch to thicken. This makes a different, tasty gravy for baked potatoes, noodles or rice.
What could be easier, right? My family loves it.
I have to admit though that since this was my mom’s recipe and I grew up eating it, perhaps when I serve it it’s seasoned with loving memories, which adds even more to the flavor.
