Crazy Good Meatloaf

The Super Bowl for Denver sure wasn’t so “super.”  What a bummer.  The Broncos jerseys have been put away until next season and it’s time to shift gears.

With six more weeks of winter predicted by the little groundhog Puxatony Phil, here’s a great recipe for a cold winter’s night.  It’s Crazy Good Meatloaf and it can be made with either ground chuck or ground turkey.  Add a few veggies or a baked potato and, voila, a delicious, hot, nourishing meal.  (And the leftovers the next day, if there are any, are even better!)

Crazy Good Meatloaf

3 lbs ground chuck or ground turkey
3/4 cup catsup
3/4 cup dry Italian flavored bread crumbs
2 eggs
1/2 tsp. thyme or basil
3/4 tsp. onion salt
1/4 tsp. pepper

Heat oven to 350 F.  Combine all the ingredients in a large bowl and press firmly into an ungreased 9 x 5 x 2-inch pan.
Bake at 350 for 70-80 minutes or until meat is firm and brown.

While meatloaf is baking prepare Tangy Pineapple Sauce:

In a small saucepan, combine:
1 large (16 ounces)  undrained can of crushed pineapple in heavy syrup
3/4 cup of catsup
3 TBSP. brown sugar
3 TBSP cornstarch

Cook (and stir frequently) over low heat until mixture begins to boil and thicken.  Spoon over baked meatloaf and bake for another 20 minutes!

The meatloaf alone is delicious, but this Tangy Pineapple Sauce topping makes it “more” than just a meatloaf.
